Easter Eggs abound so I thought you might want to know the “skinny” on them before you peel back those painted beauties and indulge.

One medium size chicken egg contains about 78 calories and approximately 213 mg. of cholesterol. A healthy person can consume about 300 mg. of cholesterol per day. A person with cardiovascular disease, diabetes, or who has a high LDL (bad cholesterol) number should stay below 200 mg. per day. The cholesterol in an egg is found only in the yolk so if you insist on a three egg omelet, use only one yolk and the whites of the others. If you just can’t stand to throw away those yolks, then try an egg substitute. Most of them are made from egg whites but they may have artificial color additives. A word of caution; if you eat egg yolks for breakfast, plan the rest of your meals accordingly, meaning no meat that day.

Easter eggs became a tradition in Medieval Europe when they were forbidden to be eaten during Lent. Eggs that were laid during Lent were boiled or preserved. On Easter Sunday, they were given to the children and servants as gifts.
