Those who really know me or who live with me know that I don’t love to cook but I can whip something up pretty fast that tastes good and is healthy. I never read recipes and I never measure. I was thinking about one of my old stand-by’s when I need to throw something together fast or when I am in the need for compfort food. To some of you this may be new, and to some just a variation on a theme. I usually have the ingredients in the house so I fall back on this quite often. I am not going to give you measurements but this is the gist of the dish: saute ground turkey, yellow onion and chopped green pepper if you wish. Add fresh garlic or garlic powder and chili powder and basil if you wish. Throw in a can of black beans. You may use dark red kidney beans but I prefer the black beans for color and flavor. Add a can or two of diced tomatoes and some frozen corn and wallah! You are done. I sometimes put this over some brown rice.
